Beans with tomatosauce


Ingredients: 

Cut the fresh beans in half, if too long and place in a bowl filled with cold water. Sautee the onion in plenty of olive oil, add the garlic and as soon as it begins to give off a smell, throw in the cubed potatoes. After a couple of minutes have passed, add the tomatoes and hot water and allow it to boil for 5 minutes.

Next, wash the fresh beans well and add them to the boiling content of your stewpot, seasoning with salt and pepper according to taste. Cover the pot and simmer for about 30 minutes. Sprinkle with finely chopped parsley and if needed, add extra hot water. Cook another 10 minutes, until the beans are very tender. Serve hot with a big piece of feta cheese
