Ingredients:
Clean the mullets, rinse and
place them in a bowl where we sprinkle salt on them. Peel the tomatoes,
mash them and place them in a skillet where we leave them to fry in their
own juices. Add salt, pepper and a pinch of sugar, to avoid the sour taste
of the tomatoes. Cover with a lid and leave the tomatoes to simmer for
about 15 – 20 minutes. Just before it is ready we place the mullets in the
tomato sauce, making sure that there are plenty of tomatoes covering the
mullets. Leave them to cook without the lid for a few minutes and once
they are ready place on each mullet some butter. Sprinkle with plenty of
finely chopped parsley and serve.
