The Maple Mousse


Ingredients: 

Soak gelatin in a small bowl of water. When the gelatin has softened, add half of the maple syrup and mix thoroughly.
In a double boiler over gently simmering water, whisk egg yolks until mixture is light yellow and falls from the spoon in thick ribbons. Add the remaining maple syrup and stir to combine. Remove from heat and gently add maple gelatin mixture.
In a separate bowl, whisk egg whites until soft peaks form. Fold whites into maple mixture.
In a separate bowl, whisk cream until soft peaks form, and fold cream into maple mixture. Chill.
