Ingredients:
Preheat oven to 425°F.
Grate potatoes and onion (or use medium blade of food processor). Combine
with remaining ingredients, except oil, into a bowl.
Brush 2 cookie sheets with oil, 1/2 tsp on each.
Gently press excess liquid from latke mixture. Divide onto cookie sheets
evenly to form 12 four-inch "pancakes". Bake 30 minutes.
