Pilaf rice


Ingredients:

Bring a pan of water to the boil and cook the rice according to packet instructions. Drain.
Heat the oil in a pan and sauté the pepper for 3-4 minutes, to soften.
Stir in the chives, seasoning, lime juice and zest and heat for a further 2-3 minutes.
Stir in the fresh herbs and lemon juice and then add the cooked rice.
Heat gently for a few minutes, stirring occasionally.
Transfer to a serving bowl and serve.
