Spanish Salad
Ingredients:
- 1/2 head lettuce
- 1 hard-cooked egg, sliced
- 2 carrots, peeled and chopped
- 1 slice bologna, cut into small pieces (substitute
with 1 slice of turkey breast cut into small pieces for healthy
alternative)
- 1 slice cheese (any kind), cut into small pieces
- 12 green olives (optional)
- 2 Tbs vinegar
- 2 Tbs olive oil
- pinch of salt
- pinch of fresh black pepper
Wash
lettuce. Pat dry with paper towels. Tear lettuce into bite-sized pieces
and divide it among 4 small plates or salad bowls.
Put
egg, carrot, bologna or substitute, and cheese or substitute on top of
lettuce. Top with olives.
Mix
vinegar, oil, salt, and pepper in a bowl.
Pour
1 tablespoon of mixture over each salad.
