Roast Stuffed Goose
with Spiced Apples
Put bird in a covered roast pan and put into the wood stove. Baste
when cooking. Time: 3 hours
Spiced Apples
Take whole 10 apples, peeled, and 1 cup of vinegar and 5 cups of
sugar.
Boil the vinegar and sugar for 5 minutes, then add the fruit to the
syrup.
Bring to a boil.
Fill jars with apples and syrup.
Repeat this process for 3 days in succession.
On the third day, add whole cloves in apples and sprinkle 1teaspoon
of cinnamon into the syrup.
Place back into large jar.
Place around goose on plate or serve as a side dish.
Stuffing
Mix 2 loaves of bread broken into small 1/8-inch squares, 1pound
potatoes mashed, 2 diced raw onions, sage, a handful of raisins,
savory and drippings of grease to make it stick together.
Fill the cavity of the goose under the breastbone and stitch with a
cord.
Put in oven and roast covered for 2 hours.
Uncover during the last hour.
The temperature is kept consistent throughout the cooking process.
Gravy
Made from drippings after meat is cooked. Using the pan from the
bird, scrape the bottom of the pan, and add water and flour to the
drippings to thicken. Salt and pepper to taste.
Accompaniments
Boil the potatoes in a cast iron pot on the wood stove. Drain. Mash
with a wooden pounder. Add salt, pepper and butter to taste.
Peel the squash. Then boil in a cast iron pot on the wood stove.
Drain. Mash with a wooden pounder. Add cinnamon and brown sugar
before serving.
Shred cabbage. Fry with lard in a frying pan on top of the wooden
stove. Salt and pepper to taste.
