Canadian Turkey Dressing
Ingredients:
- bread,
sourdough, cubed
- 1/2 cup
unsalted butter
- 1 large
onion, finely, chopped
- 3 stalks
celery, finely, chopped
- 1 carrot,
diced, small
- 1 lb. wild
mushroom, chopped or 1 lb. Oyster mushroom, chopped or 1 lb. shiitake
mushroom, chopped or 1 lb. portabello mushroom, chopped
- 2 tbsp fresh
chopped ginger
- 2 cans smoked
oyster, drained
- 3/4 cup
pumpkin seeds, roasted
- 1 cup dried
cranberries
- 1 tbsp fresh
chopped rosemary
- 1 tbsp fresh
chopped sage
- 1 tbsp fresh
chopped thyme
- 4 cloves
garlic, minced
- 3 cup chicken
stock
- 2 cup
butternut squash, skin removed, cubed
Preheat oven to
200f and bake bread cubes 1 hour.
Melt butter in large pan.
Cook squash, onion, celery and carrot 10 minutes over medium heat.
Add mushrooms, ginger and garlic, cook 3 minutes.
Add everything else, including bread, except chicken stock. Stir
well, cook 4 minutes.
Add stock 1 cup at a time until absorbed. Bake at 350f for about 45
minutes.
